1 pound flank steak, thinly sliced against the grain

8 ounces egg noodles (or your choice of noodles)

1 tablespoon vegetable oil

1 tablespoon sesame oil

2 garlic cloves, minced

1-inch piece of ginger, grated

1 red bell pepper, julienned

1 cup sugar snap peas, trimmed

3 green onions, chopped (whites and greens separated)

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1/2 teaspoon black pepper

1 teaspoon red pepper flakes (optional, for heat)

Sesame seeds (for garnish)

Fresh cilantro leaves (for garnish)

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak, soy sauce, oyster sauce, cornstarch, black pepper, and red pepper flakes. Mix well, ensuring the beef is thoroughly coated. Allow to marinate for at least 30 minutes (up to 2 hours for deeper flavor).

    Cook the Noodles: In a large pot, bring water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

      Stir-fry the Veggies: In a large wok or skillet, heat the vegetable oil and sesame oil over medium-high heat. Add the minced garlic and grated ginger, sautéing briefly until fragrant (about 30 seconds).

        Add the Beef: Toss in the marinated beef, spreading it out in the pan. Sear for about 2-3 minutes until browned on one side, then stir well to cook through completely, about another 2 minutes.

          Incorporate the Vegetables: Add the julienned bell pepper, sugar snap peas, and the white parts of the green onions. Stir-fry everything together for about 3-4 minutes until the vegetables are just tender.

            Combine with Noodles: Add the cooked noodles to the beef and vegetable mixture. Toss everything together gently, allowing the noodles to absorb some of the sauce for about 2-3 minutes.

              Finish and Serve: Remove from heat and garnish with the green parts of the green onions, a sprinkle of sesame seeds, and fresh cilantro leaves. Serve immediately while hot.
