BBQ Ranch Chicken Quinoa Bowls

1 lb boneless, skinless chicken breasts

1 cup quinoa, rinsed

2 cups low-sodium chicken broth or water

1 cup BBQ sauce (store-bought or homemade)

1/2 cup ranch dressing (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup corn (canned or frozen)

1 cup black beans, drained and rinsed

1 avocado, sliced

1/4 cup red onion, diced

1/4 cup fresh cilantro, chopped

Lime wedges, for garnish

Salt and pepper, to taste

Olive oil, for cooking

Instructions
 

Prepare the Quinoa: In a medium pot, bring the chicken broth (or water) to a boil. Add the rinsed quinoa, a pinch of salt, and reduce to a simmer. Cover and cook for 15 minutes or until the quinoa is fluffy and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and set aside.

    Cook the Chicken: While the quinoa cooks, heat a large skillet over medium-high heat. Drizzle with olive oil. Season the chicken breasts with salt and pepper. Once the skillet is hot, add the chicken and cook for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F). Once cooked, remove from the skillet and let it rest for 5 minutes. Slice the chicken into strips.

      Combine BBQ Sauce: In a small bowl, mix the cooked chicken strips with 1/2 cup of BBQ sauce until well-coated. You can also add more sauce if you prefer a saucier dish.

        Assemble the Bowls: In serving bowls, start by adding a generous scoop of quinoa as the base. Top with BBQ chicken strips, cherry tomatoes, corn, black beans, avocado slices, and diced red onion.
