1 cup brown or green lentils, rinsed and drained

2 cups vegetable broth or water

1 small onion, finely chopped

2 cloves garlic, minced

1 large carrot, grated

1/2 cup breadcrumbs (or gluten-free alternative)

1/4 cup BBQ sauce (plus extra for serving)

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon olive oil

1 tablespoon soy sauce or tamari (for gluten-free)

1 tablespoon fresh parsley, chopped (optional)

Slider buns (whole-grain or gluten-free)

Lettuce, tomato slices, pickles, and any other desired toppings

Instructions
 

Cook the Lentils: In a medium pot, combine the rinsed lentils and vegetable broth. Bring to a boil, then reduce the heat and let simmer for about 20-25 minutes or until lentils are tender and most of the liquid is absorbed. Drain any excess liquid, if necessary, and set aside to cool slightly.

    Sauté Vegetables: In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté for 3-4 minutes until the onion is translucent. Add in the grated carrot and cook for another 2-3 minutes, stirring continuously.

      Mix the Ingredients: In a large bowl, combine the cooked lentils, sautéed vegetables, breadcrumbs, BBQ sauce, smoked paprika, cumin, black pepper, salt, soy sauce, and parsley. Mix well until all ingredients are fully combined. You can use a fork or your hands to mash the mixture slightly for a cohesive texture.

        Form Sliders: With your hands, form the mixture into small patties (about 2 inches in diameter). You should get around 8-10 patties, depending on the size.

          Cook the Sliders: Preheat a non-stick skillet or grill pan over medium heat. Place the lentil patties in the skillet and cook for about 4-5 minutes on each side or until they are golden brown and heated through. If you like a bit more BBQ flavor, brush some extra BBQ sauce on the patties while they cook.

            Assemble the Sliders: Toast your slider buns lightly. Place a lentil patty on each bun and top with lettuce, tomato slices, pickles, or any other desired toppings. Drizzle extra BBQ sauce on top if desired.
