1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

1 cup crushed BBQ potato chips

1 cup flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup BBQ sauce (for dipping)

Cooking oil (for frying)

Prepare the Chicken: Start by cutting the chicken breasts into bite-sized pieces. Pat them dry with paper towels to remove excess moisture; this helps the coating stick better.

    Set Up the Breading Station: In three separate bowls, prepare your breading station:

      - In the first bowl, mix the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.

        - In the second bowl, whisk the eggs until lightly beaten.

          - In the third bowl, place the crushed BBQ potato chips.

            Coat the Chicken:

              - Dip a piece of chicken into the flour mixture, ensuring it’s well-coated. Shake off any excess flour.

                - Next, dip it into the beaten eggs, letting the excess egg drip off.

                  - Finally, roll the chicken in the crushed BBQ chips, pressing down slightly to adhere the chips to the chicken.

                    Heat the Oil: In a large skillet, heat about ½ inch of cooking oil over medium-high heat. To test if the oil is ready, drop in a small piece of bread. If it bubbles up and starts to brown, the oil is hot enough.

                      Fry the Nuggets: Carefully add the breaded chicken pieces to the hot oil in batches (don’t overcrowd the pan). Fry for about 4-5 minutes on each side or until they are golden brown and cooked through (internal temperature should reach 165°F/74°C).

                        Drain and Serve: Once cooked, remove the nuggets from the oil and place them on a plate lined with paper towels to drain any excess oil.
