1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, finely chopped

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon ground cumin

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon apple cider vinegar

Salt and pepper to taste

4 whole wheat or brioche burger buns

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Chickpeas: In a medium bowl, mash the drained chickpeas with a fork or potato masher until chunky but not completely smooth. Set aside.

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 4-5 minutes, or until the onion is translucent.

      Add Garlic and Spices: Add the minced garlic, smoked paprika, chili powder, and cumin to the skillet. Stir and cook for another 1 minute until the spices are fragrant.

        Combine Ingredients: Add the mashed chickpeas to the skillet along with the BBQ sauce and apple cider vinegar. Stir well to combine all the ingredients.

          Simmer: Reduce the heat to low and let the mixture simmer for about 10 minutes. Stir occasionally and season with salt and pepper to taste.

            Prepare the Buns: While the chickpea mixture simmers, toast the burger buns lightly on a skillet or in a toaster.

              Assemble the Sloppy Joes: Spoon the BBQ chickpea mixture generously onto the bottom half of each toasted bun. If desired, garnish with fresh cilantro or parsley.
