2 large boneless, skinless chicken breasts

1 cup BBQ sauce (homemade or store-bought)

6 cups mixed salad greens (e.g., romaine, spinach, arugula)

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 red bell pepper, diced

1 avocado, diced

1/2 cup red onion, thinly sliced

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Optional: lime wedges for serving

Marinate the Chicken: In a bowl, combine the chicken breasts with 1/2 cup of BBQ sauce. Ensure they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

    Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Once hot, remove the chicken from the marinade and discard the leftover sauce. Grill the chicken for about 6-7 minutes on each side, or until it reaches an internal temperature of 165°F (75°C) and has nice grill marks. Remove from the grill, let it rest for 5 minutes, and then chop into bite-sized pieces.

      Prepare the Salad Base: While the chicken is grilling, wash and dry the salad greens. In a large salad bowl, add the mixed greens, cherry tomatoes, corn, black beans, diced red bell pepper, and red onion.
