1 large head of cauliflower

1 cup of breadcrumbs (Panko for extra crunch)

1/2 cup of all-purpose flour

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup of buttermilk (or plant-based milk)

1 cup BBQ sauce (your favorite brand or homemade)

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat.

    Prepare the Cauliflower: Remove the leaves and stem from the cauliflower and cut it into bite-sized florets. Rinse and dry thoroughly.

      Make the Battering Station: In a large mixing bowl, whisk together flour, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Gradually whisk in the buttermilk until combined. It should form a smooth batter.

        Prepare the Breadcrumbs: In another bowl, add the breadcrumbs and set aside.

          Coat the Cauliflower: Dip each cauliflower piece first into the batter, allowing any excess to drip off, then roll it in the breadcrumbs to coat evenly. Place the coated bites onto the prepared baking sheet.
