2 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

1 cup fresh basil, chopped (plus extra for garnish)

2 tablespoons olive oil

1 tablespoon balsamic vinegar

2 cloves garlic, minced

Salt and pepper, to taste

½ teaspoon red pepper flakes (optional for heat)

1 cup chicken broth

1 onion, thinly sliced

½ cup crumbled feta cheese (optional)

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. If desired, you can pound them to an even thickness for more uniform cooking.

    Sear the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

        Add Peaches and Broth: Introduce the sliced peaches to the skillet and stir gently for about 2 minutes. Then, pour in the chicken broth and balsamic vinegar, bringing the mixture to a simmer.

          Combine Ingredients: Return the chicken breasts to the skillet, nestling them among the peach and onion mixture. Sprinkle the chopped basil over the top, cover, and let it simmer for an additional 5-7 minutes so the flavors meld together and the chicken warms through.

            Finish and Serve: Once everything is cooked through and the sauce is slightly thickened, taste and adjust seasoning with more salt, pepper, or balsamic vinegar as desired.
