Ingredients

4 ripe bananas, sliced

2 cups heavy whipping cream

1 cup powdered sugar

1 teaspoon vanilla extract

1 package (14.4 oz) graham crackers

1/2 cup creamy peanut butter

1/2 cup chopped walnuts (optional)

Chocolate syrup (for drizzling)

Fresh mint leaves (for garnish)

Instructions

Prepare the Whipped Cream: In a large mixing bowl, whip the heavy cream until it starts to thicken. Gradually add in the powdered sugar and vanilla extract, then continue whipping until stiff peaks form. Set aside.

Layer the Graham Crackers: In a 9x13 inch baking dish, arrange a single layer of graham crackers at the bottom.

Peanut Butter Spread: In a small bowl, mix the creamy peanut butter until it’s smooth. Spread a thin layer of this peanut butter over the graham crackers.

Add Bananas: Add a layer of sliced bananas over the peanut butter. You can add a sprinkle of chopped walnuts on top of the bananas if using.

Whipped Cream Layer: Spoon a generous layer of whipped cream over the bananas, spreading evenly to cover them.

Repeat Layers: Repeat steps 2 through 5 to create another two layers: graham crackers, peanut butter, bananas, and whipped cream, ending with a final layer of whipped cream on top.

Chill: Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or overnight if possible. This allows the flavors to meld and the graham crackers to soften.

Serve: Once chilled, slice the icebox cake into squares. Drizzle with chocolate syrup and garnish with fresh mint leaves before serving.
