2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond flour (or any flour of choice)

1/4 cup chia seeds

1/4 cup honey or maple syrup (adjust for sweetness)

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/4 cup finely chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mash Bananas: In a mixing bowl, mash the ripe bananas until smooth. They should be creamy with minimal lumps.

      Combine Wet Ingredients: Stir in the honey (or maple syrup) and vanilla extract into the mashed bananas until well combined.

        Mix Dry Ingredients: In another bowl, combine the rolled oats, almond flour, chia seeds, cinnamon, and salt. Mix well to ensure all dry ingredients are evenly distributed.

          Combine Mixtures: Gradually add the dry mixture to the wet banana mixture. Stir until fully incorporated. If desired, fold in dark chocolate chips and nuts for an extra crunch and flavor.

            Form Cookies: Using a tablespoon or a small ice cream scoop, drop rounded tablespoons of the cookie dough onto the prepared baking sheet. Flatten them slightly as they won’t spread much during baking.
