1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon cinnamon

For the Filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

3 large eggs

2 ripe bananas, mashed

1 teaspoon vanilla extract

1 tablespoon lemon juice

½ cup sour cream

½ cup crushed walnuts (plus extra for topping)

For the Caramel Sauce:

1 cup brown sugar

½ cup heavy cream

¼ cup unsalted butter

1 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Mix well until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove and let it cool slightly.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add in the mashed bananas, vanilla extract, and lemon juice, mixing until combined. Add the eggs one at a time, mixing well after each addition. Fold in the sour cream and crushed walnuts until just combined.

        Assemble the Cheesecake: Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.

Stir until the sugar has dissolved and the mixture comes to a gentle boil. Lower the heat and let it simmer for about 5-7 minutes, stirring occasionally until slightly thickened. Remove from heat and stir in the vanilla extract and a pinch of salt. Let cool.

              Serve: Once the cheesecake is thoroughly chilled, carefully remove it from the springform pan. Drizzle the caramel sauce over the top, and sprinkle with additional crushed walnuts for garnish. Slice and serve this decadent dessert to your delight!
