Ingredients

3 ripe bananas, mashed

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup buttermilk

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (optional, for consistency)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or two 9-inch round cake pans.

    Make the Cake Batter:

      - In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.

        - Add the mashed bananas, eggs, and vanilla extract. Mix until well combined.

          - In a separate bowl, whisk together the flour, baking soda, and salt.

            - Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined; do not overmix.

              Bake the Cake:

                - Pour the batter into the prepared pan(s) and smooth the top with a spatula.

                  - Bake in the preheated oven for 25-30 minutes (for round pans) or about 35-40 minutes (for a 9x13 pan), or until a toothpick inserted into the center comes out clean.

                    - Once baked, let the cake cool in the pan for 10 minutes, then transfer to wire racks to cool completely.

                      Prepare the Cream Cheese Frosting:

                        - In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.

                          - Gradually add the powdered sugar, mixing well after each addition.

                            - Add the vanilla extract and mix until fully incorporated. If the frosting is too thick, add a tablespoon of milk to reach the desired consistency.

                              Frost the Cake:

                                - Once the cake layers are completely cooled, place one layer on a serving platter. Spread a generous amount of cream cheese frosting on top.

                                  - Place the second layer on top (if using round pans), and spread more frosting on top and around the sides. For a 9x13 pan, just spread the frosting evenly over the top.

                                    - Feel free to decorate with banana slices, nuts, or sprinkles if desired!
