Ingredients

3 ripe bananas, mashed

1/3 cup melted coconut oil

1 teaspoon vanilla extract

1/2 cup brown sugar

1/2 cup granulated sugar

2 large eggs

1 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 1/2 cups all-purpose flour

1/2 cup chopped walnuts or pecans (optional)

1/2 cup semi-sweet chocolate chips (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas with melted coconut oil. Stir in the vanilla extract, brown sugar, and granulated sugar until well blended.

Add Eggs: Beat in the eggs, one at a time, ensuring that each is fully incorporated before adding the next.

Mix Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, ground cinnamon, and all-purpose flour.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to over-mix; a few lumps are fine.

Fold in Add-ins: If you're using walnuts or pecans and chocolate chips, gently fold them into the batter.

Pour the Batter: Transfer the batter into the prepared loaf pan and smooth out the top with a spatula.

Bake: Place the pan in the preheated oven and bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.

Cool: Once baked, remove the banana bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Serve: Slice and enjoy your Banana Bread Delight warm or at room temperature. It pairs wonderfully with butter or cream cheese!
