2 boneless, skinless chicken breasts

1 tablespoon Dijon mustard

1 tablespoon fresh thyme leaves (or 1 teaspoon dried)

6 cups mixed greens (spinach, arugula, and romaine work well)

1/2 cup crumbled feta cheese

1/4 cup sliced almonds (or walnuts for a deeper flavor)

Additional balsamic vinegar for drizzling
