1 lb (450g) baby carrots, peeled and trimmed

1 lb (450g) rainbow carrots, cut into 2-inch pieces

3 tablespoons extra-virgin olive oil

4 tablespoons balsamic vinegar

2 tablespoons honey or maple syrup (for a vegan option)

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Crumbled feta cheese or goat cheese for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Marinade: In a large mixing bowl, whisk together the olive oil, balsamic vinegar, honey (or maple syrup), dried thyme, garlic powder, salt, and pepper until well combined.

      Coat the Carrots: Add the baby carrots and rainbow carrots to the marinaded bowl. Toss them well, ensuring they are evenly coated with the marinade.

        Arrange on Baking Sheet: Spread the marinated carrots in a single layer on the prepared baking sheet. Make sure they are not overcrowded for even roasting.
