1 medium zucchini, sliced into thin rounds

1 medium yellow bell pepper, cut into strips

1 medium red onion, sliced into rings

1 cup cherry tomatoes, halved

2 tablespoons olive oil

Salt and pepper to taste

1/4 cup balsamic vinegar

2 tablespoons honey or maple syrup

4 slices of whole grain or sourdough bread

1 cup fresh arugula or spinach

1/2 cup feta cheese, crumbled (optional)

1 avocado, sliced (optional)

Instructions
 

Preheat your grill or grill pan over medium heat.

    Prepare the vegetables: In a large bowl, combine the zucchini, bell pepper, red onion, and cherry tomatoes. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
