2 large sweet potatoes

3 tablespoons olive oil

2 tablespoons honey

Zest of 1 lemon

2 tablespoons lemon juice

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon sea salt

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the sweet potatoes: Scrub the sweet potatoes under running water to remove any dirt. Dry them with a towel, then cut them into wedges. Aim for uniform size for even cooking.
