Baked Spinach Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

3 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of boiling salted water, cook the jumbo shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

        Stuff the Shells: Using a spoon, fill each cooked pasta shell generously with the spinach and cheese mixture. Place each stuffed shell seam-side up in a 9x13 inch baking dish.

          Add the Marinara Sauce: Pour the marinara sauce evenly over the stuffed shells, making sure they are well covered. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves, if desired, and serve hot.
