Baked Potato Chicken and Broccoli Casserole

4 medium potatoes, peeled and cubed

2 cups cooked chicken, shredded

2 cups broccoli florets (fresh or frozen)

1 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1 cup sour cream

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

1 tablespoon olive oil

1/4 cup green onions, sliced (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Potatoes: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 10-12 minutes. Drain and set aside.

      Steam the Broccoli: If using fresh broccoli, steam until tender but still bright green, about 5 minutes. If using frozen, simply thaw using your preferred method.

        Prepare the Sauce: In a large bowl, mix the sour cream, milk, garlic powder, onion powder, paprika, salt, and pepper until smooth.

          Combine Ingredients: In a large mixing bowl, combine the cooked potatoes, shredded chicken, steamed broccoli, and half of the cheddar and mozzarella cheese. Pour the sour cream mixture over the top and stir until everything is well coated.

            Prepare Baking Dish: Lightly grease a 9x13-inch baking dish with olive oil. Pour the casserole mixture into the dish and spread it evenly.

              Add Cheese Topping: Sprinkle the remaining cheddar and mozzarella cheese evenly over the top of the casserole.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and golden.

                  Garnish and Serve: Once baked, remove the casserole from the oven and let it cool for a few minutes. Garnish with sliced green onions before serving.
