Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup grated Parmesan cheese

1 cup breadcrumbs (regular or panko for extra crunch)

3 large eggs

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon dried Italian herbs (optional)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare the Cauliflower: Wash and cut the cauliflower into bite-sized florets, making sure they are similar in size for even cooking.

Make the Breading Mixture: In a medium bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, black pepper, and dried Italian herbs. Mix well to ensure an even distribution of the spices.

Prepare the Egg Wash: In a separate bowl, beat the eggs until they are well combined.

Coat the Cauliflower: Dip each cauliflower floret first into the egg wash, allowing any excess to drip off. Then, roll it in the breadcrumb and cheese mixture until fully coated. Place the coated florets on the prepared baking sheet.

Drizzle with Olive Oil: Once all florets are coated, drizzle the olive oil evenly over the top to help with browning and crispiness.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the cauliflower is golden brown and crispy. Flip the florets halfway through the baking time to ensure even cooking.

Garnish and Serve: Once baked, remove from the oven and let cool for a minute. Garnish with fresh chopped parsley before serving.

Enjoy: Serve warm as a delicious appetizer or a side dish, with your favorite dipping sauce like marinara or ranch dressing.
