Baked Mozzarella Stuffed Turkey Meatballs

For the Meatballs:

1 pound ground turkey

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 large egg

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

For the Filling:

1 cup mozzarella cheese, cut into small cubes

For the Sauce:

2 cups marinara sauce (store-bought or homemade)

1 teaspoon olive oil

1/2 teaspoon red pepper flakes (optional)

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the Oven:

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

      Prepare the Meatball Mixture:

        In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, egg, salt, black pepper, and Italian seasoning. Use your hands or a spoon to mix until all ingredients are well combined.

          Stuff the Meatballs:

            Take a portion of the turkey mixture (about 2 tablespoons) and flatten it in your palm. Place a cube of mozzarella cheese in the center and wrap the turkey around it, rolling it into a tight ball. Repeat this process until all the mixture and cheese are used up.

              Bake the Meatballs:

                Place the stuffed meatballs on the prepared baking sheet, making sure they are spaced out evenly. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and cooked through (internal temperature of 165°F or 74°C).

                  Prepare the Sauce:

                    While the meatballs are baking, heat the olive oil in a small saucepan over medium heat. Add the marinara sauce and red pepper flakes (if using) and bring to a simmer. Allow the sauce to cook for about 5-7 minutes, stirring occasionally.

                      Serve:

                        Once the meatballs are done baking, remove them from the oven and let them cool for a couple of minutes. Serve them in a bowl topped with the hot marinara sauce and garnish with fresh basil or parsley if desired.
