Ingredients

1 lb chicken tenderloins

1 cup plain Greek yogurt

1/4 cup mayonnaise

2-3 canned green chilies, chopped (mild or spicy based on preference)

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and pepper to taste

Fresh cilantro, chopped for garnish

Lime wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the Chicken: Rinse the chicken tenderloins under cold water and pat dry with a paper towel.

Make the Marinade: In a mixing bowl, combine the Greek yogurt, mayonnaise, chopped green chilies, garlic powder, onion powder, smoked paprika, cumin, salt, and pepper. Mix until well combined.

Marinate the Chicken: Add the chicken tenders to the bowl and coat them thoroughly with the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Prepare the Breading: In another bowl, combine the panko breadcrumbs, grated Parmesan cheese, and a pinch of salt and pepper. Toss to combine.

Coat the Tenders: Remove the marinated chicken tenders from the fridge. Dredge each piece in the panko mixture, pressing gently to adhere the crumbs to the chicken.

Bake the Tenders: Lay the breaded chicken tenders on the prepared baking sheet, ensuring they are spaced apart for even cooking. Bake in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown, flipping halfway through.

Garnish and Serve: Once baked, remove the chicken tenders from the oven. Allow to cool slightly before garnishing with chopped cilantro. Serve with lime wedges on the side for an extra burst of flavor!
