Baked Gnocchi with Sausage

1 pound potato gnocchi (store-bought or homemade)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound smoked sausage, sliced (Italian or any preferred variety)

4 cups fresh spinach, chopped

1 can (14.5 oz) diced tomatoes, drained

½ cup heavy cream

1 teaspoon dried oregano

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish.

    Cook Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package directions until they float (typically 2-3 minutes); drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until it becomes translucent. Add the minced garlic and cook for an additional 1 minute.

        Cook the Sausage: Add the sliced smoked sausage to the skillet and cook until browned, about 5-7 minutes.

          Add Spinach and Tomatoes: Stir in the chopped spinach and cook until just wilted (about 2 minutes). Then add the drained diced tomatoes, heavy cream, oregano, red pepper flakes, and season with salt and pepper. Stir well to combine.

            Combine Ingredients: Gently fold the cooked gnocchi into the sausage and spinach mixture until well coated.

              Transfer to Baking Dish: Pour the mixture into the prepared baking dish. Sprinkle the shredded mozzarella and grated Parmesan evenly over the top.

                Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
