Ingredients

2 cups all-purpose flour

1 teaspoon active dry yeast

1 teaspoon sugar

¾ cup warm water (110°F or 43°C)

2 tablespoons olive oil

1 teaspoon salt

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh parsley, finely chopped

½ teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

Sea salt, for sprinkling

2 tablespoons melted butter, for brushing

Instructions

Activate the Yeast: In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Make the Dough: In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the activated yeast mixture and olive oil. Mix until a dough begins to form.

Knead the Dough: Transfer the dough to a lightly floured surface and knead for about 6-8 minutes until smooth and elastic.

First Rise: Place the kneaded dough into a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour or until it has doubled in size.

Prepare the Herb Mixture: In a small bowl, mix the minced garlic, rosemary, parsley, oregano, and red pepper flakes (if using). Set aside.

Shape the Flatbreads: Preheat your oven to 400°F (200°C). Once the dough has risen, punch it down and divide it into small portions (about 12 pieces). Roll each piece into a small ball and flatten it into a round disc about ¼ inch thick.

Add the Herb Mixture: Place the flattened discs on a parchment-lined baking sheet. Brush each disc with melted butter and sprinkle generously with the garlic herb mixture and a pinch of sea salt.

Bake: Bake in the preheated oven for 12-15 minutes, or until golden brown and fragrant.

Serve: Remove from the oven, let cool slightly, and serve warm. These flatbread bites can be enjoyed on their own or with your favorite dip!
