Baked Garlic Butter Potatoes

Baked Garlic Butter Potatoes are a simple yet sensational side dish that can transform any meal. 1.5 lbs baby or small Yukon Gold potatoes

6 tablespoons unsalted butter, melted

6 cloves garlic, minced

1 teaspoon dried rosemary (or 1 tablespoon fresh, chopped)

1 teaspoon dried thyme (or 1 tablespoon fresh, chopped)

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)

Optional: 1 tablespoon grated Parmesan cheese for topping

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash the potatoes thoroughly and pat them dry. If they are larger Baby Yukon Gold potatoes, cut them in half or quarters to ensure even cooking.

      Make the Garlic Butter Mixture: In a small bowl, combine the melted butter, minced garlic, dried rosemary, dried thyme, salt, and black pepper. Stir well to mix all the flavors together.

        Coat the Potatoes: Place the potatoes in a large mixing bowl and pour the garlic butter mixture over them. Toss until all the potatoes are well coated with the flavorful mix.

          Arrange on Baking Sheet: Line a baking sheet with parchment paper or lightly grease it. Spread the coated potatoes out in a single layer, ensuring they are not overcrowded for even roasting.

            Bake the Potatoes: Roast the potatoes in the preheated oven for about 30-40 minutes, flipping them halfway through. Bake until they are golden brown and fork-tender.

              Add Parmesan (Optional): If you’d like a cheesy finish, sprinkle grated Parmesan cheese over the potatoes during the last 5 minutes of baking. Allow it to melt and crisp up slightly.

                Garnish and Serve: Remove the potatoes from the oven, let them cool for a couple of minutes. Sprinkle freshly chopped parsley on top for color and freshness. Serve warm as a delightful side dish.
