2 cups cherry tomatoes, halved

8 ounces feta cheese block

1/4 cup extra-virgin olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

12 ounces pasta (penne, rigatoni, or any preferred shape)

Fresh basil leaves, for garnish

Zest of 1 lemon (optional, for brightness)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare baking dish: In a large baking dish, combine the halved cherry tomatoes, crumbled feta cheese, minced garlic, olive oil, oregano, red pepper flakes, salt, and black pepper. Toss everything together until the tomatoes are well coated and the feta is nestled in the middle.

      Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the tomatoes have burst and the feta cheese is golden and soft.

        Cook the pasta: While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta cooking water.

          Combine everything: Once the feta and tomatoes are done, remove the baking dish from the oven. Use a fork to mash the feta and mix it with the burst tomatoes to create a creamy sauce. If desired, add some reserved pasta water, a little at a time, until you achieve your desired sauce consistency.

            Mix pasta and sauce: Add the cooked pasta directly into the baking dish with the sauce. Stir well to coat the pasta evenly with the creamy mixture.
