Baked Egg Tortilla

6 large eggs

1/2 cup milk (or plant-based milk)

1 tsp salt

1/2 tsp black pepper

1 cup diced bell peppers (mix of red, yellow, and green)

1 cup diced tomatoes (fresh or canned, drained)

1/2 cup finely chopped onion

1 cup cooked and crumbled breakfast sausage or chorizo (optional for non-vegetarian)

1 cup shredded cheese (cheddar, Monterey Jack, or a mix)

4 large tortillas (flour or corn, your choice)

Fresh cilantro or parsley for garnish

Olive oil or cooking spray for greasing the baking dish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Baking Dish: Grease a 9x13-inch baking dish with olive oil or cooking spray to prevent sticking.

      Whisk the Eggs: In a medium bowl, crack the eggs and add the milk, salt, and black pepper. Whisk until well combined and the mixture is frothy.

        Sauté the Veggies: In a skillet over medium heat, add a splash of olive oil. Once heated, sauté the diced onion, bell peppers, and tomatoes until softened and fragrant, about 5-7 minutes. Remove from heat.

          Combine Fillings: In a large bowl, mix the sautéed vegetables with the cooked sausage (if using) and half of the shredded cheese.

            Layer the Tortillas: Place one tortilla in the greased baking dish and spread about a quarter of the vegetable and meat mixture on top. Pour some of the egg mixture over the filling until lightly coated. Repeat with the remaining tortillas, filling them until all ingredients are used, finishing with a final tortilla on top.

              Pour Remaining Egg Mixture: Pour any remaining egg mixture evenly over the top layer of tortillas, ensuring it seeps into the layers.

                Add Cheese: Top with the remaining shredded cheese, sprinkling generously to cover.

                  Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes or until the egg is set and the top is golden brown and bubbly.
