2 tbsp olive oil

1 tsp sea salt

1 tsp black pepper

1 cup sharp cheddar cheese, shredded

½ cup cream cheese, softened

2-3 jalapeños, finely chopped (remove seeds for less heat)

¼ cup green onions, chopped

1 tsp garlic powder

½ tsp smoked paprika

¼ cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Potatoes: Wash the russet potatoes thoroughly under running water. Pat them dry with a kitchen towel. Prick each potato several times with a fork to prevent them from bursting while baking.

      Bake the Potatoes: Rub each potato with olive oil, then sprinkle with sea salt and black pepper. Place them directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until tender when pierced with a fork.
