1 medium zucchini, grated and excess moisture squeezed out

1 medium carrot, grated

1/2 cup all-purpose flour (or gluten-free flour, if preferred)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 large eggs (or flax eggs for a vegan option)

2 green onions, finely chopped

1 garlic clove, minced

1 tsp ground cumin

1/2 tsp smoked paprika

Salt and pepper, to taste

Olive oil spray (or a small amount of olive oil for brushing)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Vegetables: In a large mixing bowl, combine the grated zucchini and carrot. Make sure to squeeze out as much moisture as possible from the zucchini to prevent soggy fritters.

      Mix Ingredients: Add the flour, grated Parmesan cheese (or nutritional yeast), eggs (or flax eggs), chopped green onions, minced garlic, cumin, smoked paprika, salt, and pepper to the bowl. Stir well until all ingredients are thoroughly combined.

        Form Fritters: Use your hands or a spoon to scoop the mixture and form small patties, about 2-3 inches in diameter. Place them on the prepared baking sheet, leaving some space between each fritter.

          Bake: Lightly spray or brush the tops of the fritters with olive oil for a golden finish. Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until they are golden brown and cooked through.
