Baked Black Bean Taco Bowls

1 cup brown rice (or quinoa)

2 cups vegetable broth (or water)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

Salt and pepper to taste

2 cups cherry tomatoes, halved

1 avocado, diced

1/2 cup fresh cilantro, chopped

Juice of 1 lime

Shredded cheese (optional)

Sour cream or Greek yogurt for serving (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook the Rice: In a medium saucepan, bring the vegetable broth to a boil. Add the brown rice (or quinoa), reduce to a low simmer, cover, and cook for 40-45 minutes until tender. Fluff with a fork and set aside.

      Prepare the Filling: In a large mixing bowl, combine the black beans, corn, diced red bell pepper, diced red onion, minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper. Toss until everything is evenly coated.

        Mix Everything: Once the rice is done, add it to the bowl of vegetable and bean mixture. Stir in the halved cherry tomatoes and lime juice. Mix until well combined.

          Assemble Taco Bowls: Pour the taco mixture into a large baking dish, spreading it out evenly. If desired, sprinkle shredded cheese on top.

            Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, until the ingredients are heated through and any cheese is melted.

              Garnish and Serve: Remove the taco bowls from the oven and let them cool for a few minutes. Top with diced avocado and chopped cilantro. Serve with sour cream or Greek yogurt on the side if desired.
