4 slices of thick-cut bacon

1 ripe avocado, halved and pitted

2 large eggs

2 slices of whole-grain bread (or your preferred bread)

1/2 cup fresh spinach leaves

1/4 cup cherry tomatoes, halved

1 tablespoon mayonnaise

1 teaspoon Dijon mustard

Salt and pepper, to taste

Olive oil or cooking spray, for frying

Optional: hot sauce or red pepper flakes for added spice

Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy (about 4-5 minutes per side). Drain on paper towels and set aside.

    Prepare the Avocado: In a small bowl, mash the avocado with a fork until smooth. Season with salt and pepper to taste. If you like, add a squeeze of lemon juice to keep it fresh.

      Fry the Eggs: In the same skillet (with bacon grease or lightly oiled), crack in the eggs. Cook them sunny-side up or over-easy, according to your preference. Season with salt and pepper.

        Toast the Bread: Toast your slices of bread in the same skillet until golden brown and crispy, about 2-3 minutes per side.

          Assemble the Sandwich: Spread the bottom slice of toasted bread with the mayonnaise and Dijon mustard. Layer on the fresh spinach, followed by the smashed avocado. Then, add the crispy bacon slices and fried eggs. Top with halved cherry tomatoes.
