Ingredients

1 bag (12 oz) tortilla chips

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup cooked and seasoned ground beef (or black beans for a vegetarian option)

1 cup black olives, sliced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1 avocado, diced

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

1/2 cup pickled jalapeños (optional)

1/4 cup salsa

1 tsp chili powder

1 tsp cumin

Salt and pepper, to taste

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

Prepare the Beef (if using): In a skillet over medium heat, add the cooked ground beef. Season with chili powder, cumin, salt, and pepper. Stir until heated through and flavors are combined. If using black beans, warm them in a separate pot and season similarly.

Layer the Nachos: On a large baking sheet, spread out half of the tortilla chips. Evenly sprinkle half of the cheddar and Monterey Jack cheeses over the chips. Add half of the seasoned beef (or black beans), followed by half of the black olives, cherry tomatoes, and red onion. Repeat the layers with the remaining ingredients to create a second layer.

Add Cheese and Bake: Top the final layer with the remaining cheese. Place the nachos in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.

Dress Up Your Nachos: Remove the nachos from the oven and let them cool slightly. Top with diced avocado, sour cream, chopped cilantro, and pickled jalapeños, if desired. Drizzle with salsa for an extra kick.

Serve and Enjoy: Carefully pull the nachos apart with a spatula or simply serve directly from the baking sheet. Enjoy with your favorite sides and some extra salsa on the side!
