Ingredients

2 ripe avocados

1 can (5 oz) of tuna in water, drained

2 tablespoons Greek yogurt (or mayonnaise, if preferred)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/4 cup diced celery

1/4 cup diced red onion

1 tablespoon chopped fresh parsley

Salt and pepper to taste

Optional: 1/4 teaspoon garlic powder

Optional: Sliced cherry tomatoes and cucumber for garnish

Instructions

Prep the Avocados: Carefully cut the avocados in half and remove the pit. Scoop out a small amount of the flesh to create a larger boat for the filling. Set aside the scooped avocado for later use in the tuna mixture.

Make the Tuna Salad: In a mixing bowl, combine the drained tuna, Greek yogurt (or mayonnaise), Dijon mustard, lemon juice, diced celery, diced red onion, and chopped parsley. Add the reserved avocado flesh and gently mix until combined. Season with salt, pepper, and optional garlic powder to taste.

Assemble the Boats: Spoon the tuna salad mixture evenly into each avocado half, heaping it slightly for an attractive presentation.

Garnish and Serve: If desired, garnish the tuna salad boats with sliced cherry tomatoes and cucumbers for added freshness and color. Serve immediately.

Enjoy: These boats are best enjoyed fresh but can be refrigerated for an hour before serving if you prefer them chilled.
