1 cup jasmine rice

1 ½ cups water

1 block (14 oz) firm tofu, pressed and cubed

2 ripe avocados, halved and pit removed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper, to taste

1 tablespoon olive oil

1 cup baby spinach or mixed greens

¼ cup green onions, finely sliced

1 tablespoon sesame seeds (optional)

1 teaspoon chili flakes (optional, for spice)

Instructions
 

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium-sized pot, combine the rice and water. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Prepare the Tofu: While the rice is cooking, heat olive oil in a non-stick skillet over medium-high heat. Add the cubed tofu. Season with garlic powder, ginger powder, salt, and pepper. Cook for about 8-10 minutes, flipping occasionally, until the tofu is golden and crispy on the outside. Drizzle soy sauce and sesame oil over the tofu, stir, and cook for an additional 2 minutes to absorb the flavors.

      Prepare the Avocado: While the tofu cooks, scoop the flesh of the ripe avocados into a bowl. Mash lightly with a fork, leaving some chunks for texture. Season with salt and pepper to taste.

        Assemble the Bowl: Fluff the cooked jasmine rice and divide it evenly between two bowls. Top each bowl with a generous portion of the sautéed tofu, a handful of baby spinach or mixed greens, and a scoop of the mashed avocado.
