2 large eggs

1 ripe avocado, peeled and pitted

1/2 cup shredded cheese (cheddar or your choice)

2 large flour tortillas

1 tbsp olive oil

Salt and pepper to taste

1/4 tsp paprika (optional)

Fresh cilantro, chopped (for garnish)

Salsa or hot sauce (for serving)

Scramble the Eggs: In a medium bowl, whisk the eggs with a pinch of salt, pepper, and paprika (if using). Heat a non-stick skillet over medium heat and add a bit of olive oil. Pour in the egg mixture and scramble gently until just cooked through. Remove from heat and set aside.

    Prepare the Avocado: In a separate bowl, mash the avocado with a fork, leaving it a bit chunky for texture. Season with salt and pepper to taste.

      Assemble the Quesadillas: On one tortilla, spread half of the mashed avocado evenly. Then, add half of the scrambled eggs and sprinkle half of the shredded cheese on top. Place a second tortilla over the top to create a quesadilla. Repeat with the remaining ingredients to make the second quesadilla.

        Cook the Quesadillas: Wipe the skillet clean and return it to medium heat. Add a bit more olive oil if needed. Carefully place one quesadilla in the skillet and cook for about 3-4 minutes, or until the bottom is golden brown and the cheese is beginning to melt. Flip the quesadilla carefully and cook for another 3-4 minutes on the other side.
