2 ripe avocados, diced

1 cup fresh corn kernels (or 1 can of corn, drained)

1 ½ cups cherry tomatoes, halved

¼ red onion, finely chopped

1 small jalapeño, minced (optional, for spice)

½ cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

Salt and pepper to taste

Feta cheese or cotija cheese, for garnish (optional)

Instructions
 

Prepare the Corn: If using fresh corn, bring a pot of water to a boil. Add the corn kernels and cook for about 5-7 minutes until tender. Drain and let cool. If using canned corn, simply drain and set aside.

    Chop the Veggies: In a large mixing bowl, combine the diced avocados, halved cherry tomatoes, chopped red onion, and minced jalapeño (if using).

      Add Corn: Once the corn is ready and cooled (if using fresh), add it to the mixing bowl with the other ingredients.

        Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to taste until well blended.

          Combine and Toss: Pour the dressing over the salad mix. Gently toss all the ingredients to ensure they're well coated with the dressing. Be careful not to mash the avocados.
