Aromatic Thai Basil Beef Stir-Fry

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons vegetable oil

4 cloves garlic, minced

2-3 Thai bird's eye chilies, minced (adjust to taste)

1 medium onion, sliced

1 cup bell peppers, sliced (red, yellow, or green)

1 cup green beans, trimmed and halved

1 cup fresh Thai basil leaves (or sweet basil if unavailable)

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon fish sauce

1 tablespoon sugar (palm sugar preferred)

1 tablespoon lime juice

Cooked jasmine rice, for serving

Instructions
 

Prep the beef: In a bowl, combine the sliced beef with 1 tablespoon of soy sauce and 1 teaspoon of sugar. Let marinate for about 15 minutes while you prep the other ingredients.

    Heat the wok: In a large wok or sauté pan, heat the vegetable oil over medium-high heat until shimmering.

      Cook the beef: Add the marinated beef to the hot oil in a single layer, allowing it to sear without stirring for about 1-2 minutes until browned. Quickly toss and cook for an additional 1-2 minutes until nearly cooked through. Remove and set aside.

        Aromatics: In the same pan, add more oil if necessary and toss in the minced garlic and bird's eye chilies. Stir-fry for about 30 seconds until fragrant.

          Vegetables: Add the sliced onion, bell peppers, and green beans to the pan. Stir-fry for around 3-4 minutes until just tender-crisp.

            Combine: Return the beef to the pan, pouring in the remaining soy sauce, oyster sauce, fish sauce, and sugar. Stir everything together to combine and coat the beef and vegetables.

              Finishing touches: Add the lime juice and toss in the fresh Thai basil leaves. Stir-fry for another minute until the basil is wilted and fragrant.

                Serve: Remove from heat and serve hot over cooked jasmine rice, garnished with extra basil if desired.
