Apple Pie Oatmeal Cups

Ingredients
  

2 cups rolled oats

1 ½ cups unsweetened almond milk (or any milk of choice)

1 large apple, peeled, cored, and diced

1/4 cup brown sugar (or coconut sugar)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/4 cup raisins (optional)

1/4 cup chopped walnuts or pecans (optional)

Cooking spray or muffin liners

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a muffin tin by spraying it with cooking spray or lining it with muffin liners.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, brown sugar, ground cinnamon, nutmeg, and salt. Mix until well combined.

      Prepare Wet Ingredients: In another bowl, whisk together the almond milk and vanilla extract.

        Combine Ingredients: Pour the wet mixture into the dry oat mixture, stirring until everything is evenly coated. Gently fold in the diced apple, raisins, and nuts if using.

          Fill Muffin Tin: Spoon the oatmeal mixture into each muffin cup, filling each about 3/4 full. You can press down slightly to compact the mixture.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the tops are golden and the oatmeal cups are set.

              Cool and Serve: Once done, remove from the oven and allow the oatmeal cups to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

                Enjoy: Serve warm or store in an airtight container for up to 5 days. You can enjoy them plain, or add a drizzle of maple syrup or a dollop of yogurt on top!
