Ingredients

2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

½ teaspoon ground cinnamon

¼ teaspoon salt

1 large egg

1/2 cup milk

1 teaspoon vanilla extract

Oil for frying

1 cup powdered sugar (for coating)

2 teaspoons ground cinnamon (for coating)

Instructions

Prepare the Apples: Peel, core, and dice the apples into small cubes, about 1/4 inch in size. Set aside.

Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, ground cinnamon, and salt until well combined.

Combine the Wet Ingredients: In a separate bowl, whisk together the egg, milk, and vanilla extract until smooth.

Create the Batter: Pour the wet mixture into the dry ingredients and stir until just combined. The batter will be slightly lumpy—do not overmix. Fold in the diced apples until evenly distributed.

Heat the Oil: In a deep pan or pot, add oil to a depth of about 2 inches. Heat over medium heat until it reaches 350°F (175°C). Use a thermometer for accurate measurement.

Fry the Bites: Once the oil is hot, drop small spoonfuls (about a tablespoon) of the apple batter into the oil. Fry in batches to avoid overcrowding, cooking for 2-3 minutes on each side or until golden brown.

Drain: Use a slotted spoon to remove the fritter bites from the oil and place them on a plate lined with paper towels to drain excess oil.

Coat in Cinnamon Sugar: In a small bowl, combine powdered sugar and ground cinnamon. While still warm, roll each fritter bite in the cinnamon sugar mixture to coat evenly.

Serve: Enjoy these delightful bites warm, perhaps with a drizzle of caramel sauce or a side of vanilla ice cream for an extra treat!
