2 tablespoons sugar

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

1 cup buttermilk (or milk with 1 tablespoon vinegar)

1 large egg

2 tablespoons melted butter

1 medium apple, peeled, cored, and finely chopped (preferably Granny Smith for tartness)

½ teaspoon vanilla extract

Maple syrup for serving

Optional: chopped pecans or walnuts for added crunch

Prepare the Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon. In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined.
