The tradition of baking with apple cider dates back to early American settlers who embraced the harvest season. They used the bounty of apples available in their orchards, transforming the fruit into cider and using it in various recipes, including cookies. Over the years, apple cider cookies have gained popularity as a quintessential fall treat, often featured at harvest festivals and Thanksgiving gatherings. The combination of cinnamon and apple is particularly evocative, conjuring memories of family gatherings, pumpkin patches, and the simple joy of autumn.

Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1/4 cup apple cider

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 tablespoon ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon salt

1 teaspoon vanilla extract

1/2 cup chopped dried apples (optional)

1/2 cup pecans or walnuts, chopped (optional)

Instructions

Preheat Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to ensure easy cleanup and prevent sticking.

Cream Butter and Sugars: In a large mixing bowl, use a hand mixer or stand mixer to cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy (about 2-3 minutes).

Add Eggs and Cider: Add the eggs one at a time, mixing well after each addition. Then, pour in the apple cider and vanilla extract, and continue mixing until fully incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.

Mix Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, mixing just until combined. Avoid overmixing to keep your cookies soft and chewy.

Fold in Add-Ins: If desired, gently fold in the chopped dried apples and nuts to the cookie dough for added texture and flavor.

Shape Cookies: Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

Bake: Bake the cookies in the preheated oven for 10-12 minutes or until the edges are set and the tops look slightly underbaked. They will continue to cook on the baking sheet after being removed from the oven.

Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: These soft and chewy apple cider cookies are best served warm and can be stored in an airtight container at room temperature for up to a week. Enjoy the cozy flavors!
