2 large apples (preferably Granny Smith or Honeycrisp), peeled, cored, and diced

1 teaspoon lemon juice

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

¾ cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 cup chopped pecans

½ cup rolled oats

¼ cup cold butter, cubed

For the Cinnamon Pecan Crunch Topping:

½ cup chopped pecans

¼ cup brown sugar, packed

1 teaspoon ground cinnamon

Pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

    Prepare the Apples: In a bowl, toss the diced apples with lemon juice. Set aside.

      Mix Dry Ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.

        Combine Sugars and Wet Ingredients: In another bowl, beat the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs and vanilla extract, mixing well until smooth.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring just until combined (do not overmix). Gently fold in the diced apples and chopped pecans.

            Prepare the Crunch Topping: In a small bowl, combine the chopped pecans, brown sugar, cinnamon, and a pinch of salt. Add the cold cubed butter and use your fingers to mix until you achieve a crumbly texture. Stir in the rolled oats.

              Fill the Pan: Pour the batter into the prepared loaf pan, smoothing the top. Evenly sprinkle the cinnamon pecan crunch topping over the batter.

                Bake: Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.

                  Cool and Slice: Once baked, allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
