Almond Joy Bars

Ingredients
  

1 1/2 cups almond flour

1 cup shredded unsweetened coconut

1/2 cup maple syrup

1/4 cup coconut oil, melted

1/4 teaspoon sea salt

1/2 teaspoon vanilla extract

1 cup whole almonds (raw or toasted)

1 cup dark chocolate chips (dairy-free if desired)

1 tablespoon coconut oil (for chocolate coating)

Instructions
 

In a large mixing bowl, combine almond flour, shredded coconut, maple syrup, melted coconut oil, sea salt, and vanilla extract. Mix until well combined and a thick dough forms.

    Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal. Press the coconut-almond mixture evenly into the bottom of the dish, creating a uniform layer.

      Place whole almonds on top of the coconut mixture, pressing them down gently so that they stick.

        In a microwave-safe bowl, combine the dark chocolate chips and 1 tablespoon of coconut oil. Heat in 30-second intervals, stirring in between, until completely melted and smooth.

          Pour the melted chocolate over the almond layer, using a spatula to spread it evenly across the top.

            Refrigerate the bars for at least 1-2 hours, or until the chocolate is set and the bars are firm.

              Once firm, lift the bars out of the baking dish using the parchment paper overhang and place on a cutting board. Cut into even squares or rectangles, as desired.

                Store the Almond Joy Bars in an airtight container in the refrigerator for up to a week or freeze them for longer storage.
