Ingredients

1 cup almond butter (creamy or crunchy)

1 cup rolled oats

1/2 cup unsweetened shredded coconut

1/4 cup honey or maple syrup

1/4 cup chocolate protein powder

1/4 cup mini dark chocolate chips

1 teaspoon vanilla extract

1/2 teaspoon sea salt

Optional: 1/4 cup chopped almonds for added crunch

Instructions

Mix the Base: In a large mixing bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well combined.

Add Dry Ingredients: Next, add the rolled oats, shredded coconut, chocolate protein powder, and sea salt to the bowl. Mix everything together until evenly distributed.

Incorporate Chocolate Chips: Gently fold in the mini dark chocolate chips and chopped almonds (if using) into the mixture for added texture and flavor.

Shape the Bites: Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is used up. You should have about 15-20 protein bites, depending on the size.

Chill: Place the protein bites on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.

Store: Once set, transfer the protein bites to an airtight container. They can be stored in the refrigerator for up to one week or frozen for up to one month.

Enjoy these delicious, nutritious bites as a quick snack, post-workout fuel, or a healthy treat!
