1 cup fresh strawberries, hulled and quartered

1 tablespoon honey (plus extra for drizzling)

2 teaspoons lemon juice

1 cup heavy cream

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup whipped egg whites (about 4 large eggs)

1/2 teaspoon cream of tartar

1/4 cup granulated sugar

Fresh mint leaves for garnish

Prepare Strawberry Compote: In a saucepan, combine the quartered strawberries, honey, and lemon juice. Cook over medium heat for about 5-7 minutes until the strawberries soften and release their juices. Remove from heat and let it cool slightly.

    Whip the Cream: In a mixing bowl, combine heavy cream, powdered sugar, vanilla extract, and salt. Using a hand mixer or a stand mixer, whip on medium speed until soft peaks form. Be careful not to over-whip. Set aside.

      Beat Egg Whites: In a clean, dry mixing bowl, add the egg whites and cream of tartar. Beat with a hand mixer on medium speed until frothy. Gradually add the granulated sugar while continuing to beat until stiff peaks form and the mixture is glossy.

        Combine Mixtures: Gently fold the whipped cream into the whipped egg whites. Use a rubber spatula to incorporate the mixtures carefully to maintain the airy texture. The goal is to keep as much volume as possible.

          Create Cloud Muffins: Preheat your oven to 325°F (165°C). Line a muffin tin with paper liners. Spoon the combined mixture into each liner, filling them about 3/4 full. Bake in the preheated oven for 15-18 minutes, or until the tops are lightly golden and spring back when touched.
