2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika (optional)

Salt and pepper to taste

2 large eggs

Cooking spray (or olive oil spray)

Instructions
 

Prep the Zucchini: Wash the zucchinis and slice them into thin rounds (about 1/8 inch thick). You can use a mandoline slicer for uniform thickness.

    Salt the Zucchini: Place the zucchini slices in a bowl and sprinkle with salt. Let them sit for about 20 minutes to draw out excess moisture. Afterward, pat them dry with paper towels.

      Set up Breading Station: In one bowl, whisk the eggs. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.

        Bread the Zucchini: Dip each zucchini slice into the egg mixture, allowing the excess egg to drip off, then coat with the breadcrumb mixture, pressing gently to ensure the crumbs stick well.

          Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
