Air-Fryer Mozzarella Zucchini Sticks

2 medium zucchinis, sliced into sticks

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon paprika

Salt and pepper to taste

Cooking spray or olive oil for spraying

Prepare the Zucchini: Start by washing the zucchinis. Cut off the ends and slice each zucchini into sticks, about 4 inches long and 1 inch thick. Pat them dry with paper towels to remove excess moisture.

    Set Up Breading Stations: In three separate shallow bowls, place the flour in the first bowl. In the second bowl, beat the eggs. In the third bowl, combine the breadcrumbs, shredded mozzarella cheese, garlic powder, Italian seasoning, paprika, salt, and pepper.

      Coat the Zucchini Sticks: Take each zucchini stick, dredge it in the flour, shaking off excess. Next, dip it in the beaten eggs, ensuring it's fully coated. Finally, roll the stick in the mozzarella breadcrumb mixture, pressing lightly to make sure the coating sticks well. Repeat this for all zucchini sticks.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Arrange Sticks in Air Fryer: Lightly spray the air fryer basket with cooking spray. Place the coated zucchini sticks in a single layer in the basket, making sure they don’t touch to allow for even cooking. You may need to do this in batches depending on the size of your air fryer.
