1 medium eggplant, sliced into thin fries (about 1/4 inch thick)

1 cup of panko bread crumbs

1/2 cup of all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

Optional: grated Parmesan cheese for extra flavor

Prepare the Eggplant: Start by slicing the eggplant into thin fries. Lay the sliced eggplant on a paper towel and sprinkle with salt. This helps to draw out excess moisture and bitterness. Let it sit for about 30 minutes. Afterward, rinse and pat dry with a paper towel.

    Set Up the Breading Station: In three separate bowls, prepare your dredging stations.

      - In the first bowl, place the all-purpose flour and season it with a pinch of salt and pepper.

        - In the second bowl, beat the two eggs.
