1 head of cauliflower, chopped into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup unsweetened almond milk (or any plant-based milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup buffalo sauce (adjust for spice preference)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Celery sticks (for serving)

Ranch or blue cheese dressing (for serving)

Instructions
 

Prep the Cauliflower: Wash and cut the cauliflower into bite-sized florets. Make sure they are uniform in size for even cooking.

    Make the Batter: In a large bowl, whisk together the flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth. The consistency should be similar to pancake batter.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it's fully coated. Allow any excess batter to drip off and place the florets on a baking sheet lined with parchment paper.

        Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

          Air Fry the Cauliflower: Place the battered cauliflower florets in the air fryer basket in a single layer (work in batches if necessary). Lightly spray them with olive oil for extra crispiness.

            Cook: Air fry at 400°F (200°C) for 12-15 minutes, shaking the basket halfway through, until they are golden and crispy.

              Add the Buffalo Sauce: In a large bowl, combine the cooked cauliflower with buffalo sauce and toss to coat evenly.

                Return to Air Fryer (Optional): If you want an extra crispy texture, return the sauced cauliflower to the air fryer for an additional 2-3 minutes at 400°F (200°C).
