8 oz (225g) pasta of your choice (fettuccine, penne, or spaghetti)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1/2 cup heavy cream or coconut cream for a vegan option

1/2 teaspoon red pepper flakes (optional, for a kick)

Salt and pepper to taste

1 cup fresh basil leaves, chopped

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Instructions
 

Boil the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it!
